This is my all time favorite type of cheesecake to make. It is everything a Burnt Basque cheesecake should be. I have used this recipe several times and love the outcome everytime. The next day, we went out to dinner and my boyfriendвЂ™s parents couldnвЂ™t wait to finish dinner and eat the leftover cheesecake. Everyone loved it and even had a second slice. The second time I made it, I let it cool for about an hour then stuck it in the fridge about two hours before dinner. I found that it has a different consistency when you eat it at room temp/warm or cold from the fridge. The first time, I served later in the day and it was very light. I added a smidgen more sugar and vanilla to mine, but the flavor of the caramelization of the outer part is what does it for me, and the texture is amazing.Дo not put anything with it except a glass of wine. What is the best way to make this a chocolate raspberry flavor? IвЂ™m thinking 200 g of dark chocolate melted with a bit of cream then added to the batter? And then throw in raspberries before baking? Just hoping to get some feedback from anyone that has done something similar before I attempt in a few days! Love this recipe!! I have made this about 4 times and it always wonderful. It's so easy to make, and fantastic on its own or with fresh berries, strawberry syrup, chocolate sauce, whipped cream, etc.

It does rise substantially above the top of the springform pan, but at that point it's solid enough that it holds together and doesn't overflow and make a mess. I've made this cheesecake 3-4 times and it's always been spectacular! I only have a 9' springform, so the baking time is a little longer, but I otherwise follow the recipe exactly as written. I always seem to need to bake it at least 5 minutes more than the recipe dictates, but I think it's because every oven I've used to bake this has run on the cooler side. Because it does rise substantially during baking, I'd recommend using a 10' springform pan (like the recipe says), if you've got one.
